I'm a relative newcomer to fantasy, but I really enjoyed Wizard's First Rule, by Terry Goodkind. It's not perfect, but WFR a good example of how a philosophical concept can be woven into a typical fantasy narrative. I love stories that pull this off. Be warned; in the last third there is a section that is...weird. Like, Fifty Shades of Grey kind of weird. Read it at your own peril. Other than that, its pretty dang good; the ending is absolutely fantastic. Also, you might want to check out Robert Jordan's Wheel of Time, if you can stand some of the more annoying bits (Egwene, cough cough)...

Try The Way of Shadows (Night Angel is the first book) by Brent Weeks. I also second the suggestion of the Demon Cycle books (Painted Man/Warded Man is the first book) by Peter V Brett they were good as well.
