About a year back I began to listen to Elvenking and the topic discussed in the song was fantasy! This surprised me and I am now wondering if there are other bands that sing about elves, fairies, demons and the like! If you know any goods ones please post!

Not that I personally know of.
Choose bands without singers, and then you can make your own story up ;)

Blind Guardian, Eluveite, Amon Amarth, Ensiferum.

Also, I believe there's a thread about bands with Tolkein inspired lyrics, that may help you out.

Led Zeppelin did a couple of songs inspired by LotR. "Ramble On" was one. "Misty Mountain Hop" and "Battle of Evermore" are two more, both from Led Zeppelin IV.

There are quite a few folk and traditional songs that would fit the bill, also. You might need to dig a little bit, but they're out there. There are lots of songs from Scotland and England (and some variants that crossed the Atlantic) that deal with elves, spells, ghosts, selkies, et al. Several from the Scandinavian countries as well.

Probably the easiest to find are some old recordings by folk-rock group Steeleye Span from the 1970s, or see what you can find of them on YouTube. They aren't the only artists to record any of this, but they are/were one of the best known.

While you're at it, look for Charles Vess' The Book of Ballads. It contains rewritings of some of the classic ballads by various fantasy writers, illustrated, comic book fashion, by Vess. It has a good discography in the back.

Faun is a medieval folk band that I just love, they're from Germany and most of their songs are either in German or another language entirely. Also there's Omnia, again folk, but I don't like them very much. Visions of Atlantis doesn't sing about elves etc per se, but they're quite fantasy related, and sing lots about Atlantis and related.. duh (name). They can be classified as symphonic metal or something I think.. but do correct me if I am wrong. ;)

Oh, and Loreena McKennit, she's just awesome, she did the song "Mystic's Dream" for the film Mists of Avalon, that's how I came to know her.. if you like high female voices, celtic atmosphere combined with ancient myths and pagan things.. she's the thing for you. ;)
